Fragrant Dried Fruit Candies

Whilst it is so important to eat a good selection of fruit and vegetables on a daily basis it is also vital that we get a good amount of protein and essential fatty acids. These candies are just the thing and always prove exceedingly popular at Healthy Living Courses.

⅔ Cup sunflower seeds
½ cup sesame seeds
⅓ Cup ground almonds
⅓ Cup unsweetened desiccated coconut
½ - 1 cup raisins
1 cup soft dates, seeds removed
Orange, clove and cinnamon essential oils to taste (use these sparingly)

Grind the seeds and coconut together in a food processor. Add the fruit and essential oils and process to a ball (this can take a while so stick with it. Add more fruit if the mixture is too dry).
Pinch off small amounts and roll into balls, then roll in a little more desiccated coconut to coat.
Place in a freezer box and keep frozen until required. They only need to soften for a minute before eating.
Nuts, seeds and fruit can be varied to include linseed, pumpkin, apricots etc., and of course you can make them without the essential oils if you prefer.

It often comes as a surprise that these candies contain no sugar whatsoever and some people have even thought that they are chocolates. They are a high energy treat and should not been consumed in excess. Particularly valuable for teenagers who are growing rapidly and having to cope with hormonal challenges and for women who suffer from premenstrual tension and crave something sweet.
